I forgot how good homemade lasagna tastes!

I have not made homemade lasagna in several years. There is just the two of us, and it seems to last and last. I have been buying th Stouffer's frozen lasagna and it is only $4 for a small one. (We split it in half)
Monday night, because of no bridge, I made lasagna from scratch. I know it cost more than $4, but boy was it good. We had it for dinner last night too, and there was still enough for both lunches today.
It was so good I think I will make it again next week.

My dh always takes his lunches to work. The subs he uses always go out to eat every day. (roofers, dry wall guys, etc.) I wonder how much money he has saved by taking his lunch to work for the past 28 years! Even when I worked in a restaurant (waitress), I always took a sandwich to work with me.

I am having a no use gas day today, so I will add $2 to the challenge.

    I know what you mean. My husband is gone several days at a time and takes a cooler with six to eight meals with him each time. He says more times than not his coworkers eat out. Such a waste of money and prob not very healthy either.

    I am having leftover lasagna today for lunch, homemade.

    I'd have no idea how to afford lunch out every meal. Dh and I used to do that last we both worked, BUT usually the meals were paid for. IT was more eating out with all the schmoozing. Once I stopped all the traveling every day I tended to just bring my lunch from home, even then. Usually just a sandwich. These days I just grab leftovers on my way out the door. Anyway, from a single/social kind of perspective I think it's fine (we didn't have any other expenses back then, for the most part), but as an old married lady I don't see the point and am glad I don't feel that eating out pressure. I am not real weight obsessive, but every time I eat out I gain weight. So I don't think I have the metabolism to handle all that eating out any more. I am concerned about maintaining my weight with so much obesity in my family. So, eating at home seems to be about 99% of the battle, for me. More money for other stuff, and it's healthier too.

    Home made lasagna--delish! Being Italiano, I make my own sauce too which kicks it up a notch. I will often try to add more vegetation to squeeze in the nutrients.

    I cannot imagine buying a lunch everyday. So unhealthy for your body and your pocketbook!

    I make my lasagna with sour cream (no fat) and cottage cheese (low fat).
